This recipe is inspired by a plat from Yunnan, China, “Fried Mint Pork Ribs”. Mint is a common seasoning in Yunnan cuisine. I was surprised by the flavor of this dish when I traveled there. This recipe is changed on the original basis, with more mint flavor, while increasing the flavor of the Rum. A taste of meat, Rum, and mint bursts in the mouth. It is definitely one of the best aperitifs for alcohol lovers. You can use a fryer or air fryer or oven to cook it.
For 2-3 people
Ingredients:
Pork ribs 500g
White Rum 50cl
Sugar 20-30g
A bunch of mints
Sichuan pepper 1-2g
Black pepper 1g salt 1 tsp
cornstarch 1-2 tbsp
a whole garlic
Soy sauce 2 tbsp (If there is no soy sauce, add more salt)
Prepare the mint rum
- Wash the mint and let it dry, insert them in a sealed jar (keep a part of mint for fried step). The more mint you use in this step, the stronger flavor of mint ribs will have.
- Pour in the white Rum. Add 20-30g of sugar to the bottle. To ensure the mint leaves are soaked in the Rum, keep the sealed jar in the refrigerator for three days.
After 3 days…
- Peel the whole garlic, take out a piece of garlic and chop it (1 tbsp), keep the rest aside.
- Wash and dry the ribs, marinated it with salt, Sichuan pepper, black pepper, soy sauce, mint rum, chopped garlic. Let marinate for at least 30 minutes, the taste will be stronger if left overnight.
- Take ribs out of the fridge, dry the surface, add the cornstarch, and mix well.
4.1 If you prefer to cook with an air fryer :
Preheat the air fryer to 180 ° C for 5 minutes, then put your ribs inside one by one. Cook it for around 20-30 minutes.
4.2 If you prefer to cook with the oven :
Preheat your oven to 180 ° C and put your pork ribs, garlic pieces, and mint in the oven, and cook for 20-30 minutes, don not forget to turn over the ribs when one side is golden.
4.3 If you prefer to cook with a fryer :
- Preheat the fryer to 160 ° C, add the remaining fresh mint, and fry it for about 3-5 minutes until the mint turns darker and tender. Remove the mint and set it aside.
- Add the garlic pieces and fry until their colors turn golden and remove.
- At this step, the oil already has the scent of mint and garlic, add the marinated ribs and fry them for 5-7 minutes. Take out the ribs.
- Increase the temperature of the oil to 180 degrees to 200 degrees, put ribs and mint and garlic in it, and fry for 30 seconds to 1 minute, then remove them. The outer skin of the ribs will be crispier after the second frying. If you are lazy, just stop in the previous step.
- Find a pretty plat, ribs are ready to serve 🙂
