Eliminate Leftovers Project-cook stale vegetable

Here comes one of my favorite salad recipe, we can make use of all our stale vegetable in the corn and leftovers rice, meanwhile, this is super delicious and healthy.

You can add any ingredient you have to this recipe while following this formula:

Egg sauce +Cooked hot grain +Cooked potatoes+any nuts

Egg sauce: egg +any salty sauce+minced garlic+any meat (not necessary)

Cooked grain: you can use the leftover rice or any grain like couscous, millet…But remember to warm it first.

Here is my favorite match:

For two people and two meals

Ingredients:

2 medium sizes of potatoes

Lettuce leaves

1 eggplant

1 pepper

2 eggs

Cooked rice for one person

Minced garlic (Depends on your taste)

Minced onion (Depends on your taste)

Chopped ham

Coriander

Vinegar

Salt

Peanuts

Chili powder or any chili ( optional)

Preserved soybeans sauce

( you can use any salty taste sauce you have but I highly recommend this one, which has a special flour of fermentation)

Step:

  1. Cut potatoes into big pieces, put these potatoes and eggplant on the steamer until they all cooked, time depends on your machine, for me, it is around 15 minutes. If it is not convenient for you to steam, you can wrap the potatoes in cling film and heat them in the microwave for five minutes to be cooked. For eggplant, you can also cut it into two parts, put in microwave for 3-5 minutes.
  2. Now we begin to do the most important egg sauce. Dice green pepper. Add a little olive oil to the pot, add minced garlic, add the egg liquid after the garlic aroma comes out, add preserved soybeans sauce, green pepper, and ham after the egg has solidified and continue to fry for a few minutes until all the ingredients are combined well.
  3.  Tear the eggplant into strips, if there is too much water comes out, pour it.
  4. Now it is time to do combination! Prepare a big container or you can do this directly in your pot, put cooked rice, cooked potatoes without skin, eggplant strips, fresh minced onions, everything inside. I also add a habanero chili I planted, you can also use chili powder. Crush the potatoes into mashed potatoes and stir together with all the ingredients.
  5. Add vinegar, salt, and coriander to your taste. Finally, Give a little peanut to increase the taste.

  6. Wait it cold or you can eat directly. When you eat, wrapped it in salad leaves, it is so interesting and delicious which definitely will be one of your favorite healthy food.
